I have a velocity problem. When outside in humidity I often have a issue that random notes will blurt out many times louder than others. If I use a non velocity patch, such as an organ, its OK. When back inside away from humidity the problem, in time, goes away. This makes it an almost impossible problem to solve, as if I take it to a repair shop it would work fine. As a panic workaround, is there any way to turn velocity (touch sensitivity) off universally across the board? Thanks

TOUCH button serves that purpose (on the right side, below voice selection buttons).

About your velocity problem... I think, that key contacts are starting to wear. These contacts are made of graphite compound which is applied on rubber (same as in all non-mechanical computer keyboards). And as graphite layer becomes thinner, it's conductivity becomes more sensible on humidity changes.
If you feel skilled enough, take keyboard apart and clean keys contact surface gently. On Youtube you can find how it's done.
