"The PSR-S975 and PSR-S775 provide a range of powerful audio-centric features. Vocal Cancel lets users effectively remove the vocal or lead instrument from an audio song to create “minus-one” tracks for practice or karaoke-style performance, and even change their pitch and tempo independently."
Does this mean that any MP3 I download on to USB can be transposed and tempo changed regardless? This seems unlikely in practice technologically speaking.

Yep, you're right on. It's definitely a case of "Your mileage may very". Like most other algorithms, transpose up or down is OK within a few semi-tones. Same could be said for tempo.

Plus, practical results are mixed. Some songs transpose OK, but a few songs have awful artifacts and are unusable for performance.
